About this dish

In Myanmar, banana blossom is a quiet secret of the kitchen, prized for its tender bite and remarkable ability to absorb the flavors it's cooked with. This curry braises shredded banana blossom in a bright tomato gravy with ginger, garlic, and turmeric, finished with chickpea flour for body and a drizzle of coconut cream for a silken, clinging texture.

It is a weeknight-friendly Burmese dish that also happens to be naturally plant-based. Serve it with steamed jasmine rice and you have a meal that tastes both comforting and quietly complex.

Method

1

Prepare the banana blossom

15 minutes

Fill a large bowl with water and add the lime juice. Remove the tough outer petals of the banana blossom and discard them. Thinly slice the tender inner petals and core, then immediately place them in the lime water to prevent discoloration. Let soak for 10 minutes, then drain and squeeze gently.

2

Make the tomato base

8 minutes

Blend the chopped tomatoes in a blender until smooth; set aside. Heat the coconut oil in a large pot over medium heat. Add the onion and cook until soft and golden, about 5 minutes. Stir in the garlic, ginger, turmeric, and cayenne and cook for 1 minute until fragrant.

3

Build the curry

9 minutes

Pour the blended tomatoes into the pot and cook, stirring occasionally, until the mixture thickens and oil begins to separate at the edges, about 8 minutes. Add the chickpea flour and cook for 1 minute, stirring constantly to toast it lightly.

4

Simmer the banana blossom

12 minutes

Add the drained banana blossom to the pot along with the vegetable stock, fish sauce (or soy sauce), and salt. Stir well to coat. Bring to a gentle simmer, cover, and cook until the banana blossom is tender but not mushy, 10 to 12 minutes. Stir occasionally to prevent sticking.

5

Finish and serve

5 minutes

Stir in the coconut cream and simmer uncovered for 2 minutes until the curry is thick and glossy. Taste and adjust salt or lime juice. Remove from heat. Garnish with cilantro and fried shallots. Serve hot with steamed jasmine rice.

Tips

  • Soaking the sliced banana blossom in lime water keeps it from darkening and helps tame its natural bitterness, a trick Burmese cooks have relied on for generations., Chickpea flour is the quiet thickener here, toast it briefly with the tomatoes to remove its raw edge before adding liquid.
  • If you can't find banana blossom, unripe jackfruit or young green papaya can stand in, though the texture will be sweeter and softer.
  • For a deeper, smokier flavor, char the tomatoes under a broiler before blending.

Serving suggestions

  • Serve with steamed jasmine rice or coconut rice.
  • Pair with a simple cucumber and red onion salad dressed with lime and salt.
  • Offer lime wedges and extra fried shallots on the side.
  • A dollop of plain vegan yogurt or coconut cream can cool the spice.
