Method
Prepare the filling
5 minsIn a pan, heat 1 tbsp of oil and sauté onion, garlic, ginger, and green chilies until soft.
Add spices
2 minsStir in turmeric, coriander, cumin, and garam masala. Cook for a minute until fragrant.
Cook shrimp
4 minsAdd the shrimp and cook until they turn pink, about 3-4 minutes.
Add potato and peas
5 minsAdd the mashed potato and peas. Mix well and cook for 5 minutes, breaking up any lumps.
Finish filling
10 minsSeason with salt, lemon juice, and coriander. Remove from heat and let cool completely.
Make sealing paste
2 minsMix flour and water into a smooth paste.
Fill samosas
15 minsTake one wrapper, place a spoonful of filling in the center, fold into a triangle or cone shape, and seal edges with the flour paste.
Heat oil
5 minsHeat frying oil to 350°F (175°C).
Fry samosas
10 minsFry samosas in batches until golden brown and crispy, about 3-4 minutes per batch. Drain on paper towels.

Tips
- Make sure the filling is completely cool before wrapping to prevent the wrappers from tearing., You can use fresh or frozen samosa wrappers, if using phyllo dough, brush with butter before folding.
- Freeze assembled samosas on a baking tray before frying – they can go straight from freezer to hot oil.
- For a healthier version, bake the samosas at 180°C (350°F) for 20-25 minutes, brushing with oil.
