Vegetable Vada with Cactus Leaf

A crispy, savory fritter that blends the nuttiness of chana dal with the subtly tangy, succulent texture of cactus leaf (nopal). This Thai-inspired vegetable vada is a study in umami layering; the cactus brings a gentle acidity that cuts through the oil, while curry leaves and ginger add aromatic depth.

chana dal
grain1 cup (200 g)

cactus leaf
vegetable1 medium leaf, diced (about 100 g)

Method
Soak the chana dal
1 hourWash the chana dal thoroughly and soak it in plenty of water for at least 1 hour. Drain well before grinding.
Prepare the cactus leaf
10 minutesHold the cactus leaf with tongs and carefully trim off all spines and the base. Rinse under running water, then dice into small cubes (about ½-inch).
Grind the batter
5 minutesAdd drained chana dal, curry leaves, ginger, green chilies, salt, turmeric, crushed coriander, and cumin to a food processor. Pulse until the mixture forms a coarse, chunky paste. Do not add water; the dal should have absorbed enough moisture. Transfer to a bowl.
Mix in cactus
2 minutesAdd the diced cactus leaf to the batter and mix well with a spoon. The mixture should be thick but slightly moist. Adjust salt if needed.
Heat the oil
5 minutesHeat the oil in a deep pan or deep fryer to 180°C (350°F). Test by dropping a tiny bit of batter; it should sizzle and rise immediately.
Shape and fry the vadas
20 minutesWet your fingers or palms with a little water. Scoop about 1½ tablespoons of batter and shape into a flat, round patty with a small hole in the center (like a donut). Carefully slide into the hot oil. Fry in batches without overcrowding, turning once, until deep golden brown (about 4-5 minutes per batch). Use a slotted spoon to transfer to a paper towel-lined plate.
Drain and serve
2 minutesLet the vadas cool on paper towels for 2 minutes. Serve hot with mint chutney or sweet chili sauce.

Tips
- Omitting the cactus leaf? Substitute with finely chopped green beans or zucchini for a different crunch.
- For a Thai touch, serve with a dip made of equal parts lime juice, soy sauce, and chopped coriander., The batter should be coarse, not smooth, a little texture ensures a crisp vada. Avoid over-processing.
- If the batter feels too dry, sprinkle a teaspoon of water and mix gently. Too wet? Add a tablespoon of rice flour.
Serving suggestions
- Serve hot with green chutney, sweet chili sauce, or a simple coconut-lime dip. They also go well with a cup of strong Thai tea.
